Growing up in Puerto Rico, the region and his mother's cooking are still an inspiration to him. He received his education at Johnson and Wales University in Miami, and followed a culinary journey that took him to John and Karen Shields' Town House in Chilhowie, Virginia, as well as famed restaurants Alinea and The Publican in Chicago as an intern. Chef Colon's passion for hospitality and hunger for creativity led to a position as Sous Chef for both Bella on the River, and Biga on the Banks in San Antonio before opening FOLC in 2014.

Andres Gonzales

CHEF DE CUISINE

A San Antonio native, Andres first attended college to pursue a career in education as a teacher.  He found a passion for cooking along the way, and began his culinary circuit at the Grand Hyatt hotel before moving into the restaurant industry, cooking alongside Jason Dady and Bruce Auden as mentors. His imagination is fueled by incorporating classic technique and bringing out the best of each ingredient within each dish.
